Winter

After the harvest, the vine goes into vegetative rest. For the winemaker will start the winter work. The pruning of course, but also the repair of the trellising, the supply of organic fertilizer and compost, the preparation of the soil for the new plantations.

The winter waist

We start pruning in January following the lunar calendar. It is a work of capital importance because it conditions the next harvest. It is also a moment of observation which gives information on the state of the vines (diseases, vigour).

Each vine is pruned individually. The winegrower follows the specifications of his appellation, in AOC Ventoux, the vines are trained in double cordon de royat. In the spring, we finish by pruning the planters.

Tillage

Since no herbicides are used, mechanical and sometimes manual tillage are the only ways to control weeds between and under the rows by using hoeing and scarifying machines with hydraulic interceps.

Amendments

Winter is also the time to bring to the soil the organic elements to compensate for the loss of annual humus, trace elements and mineral elements to maintain its good balance and that of the vines.

We use organic soil improvers with low nitrogen content and their contribution is reasoned to the plot according to its needs. For this we carry out soil and leaf analyses. The compost is used as a base fertiliser to rebalance the soil after the vines have been pulled up for future planting, and as a maintenance fertiliser for plots that need it.
